Vegetarian Stuffed Eggplant

Round eggplants stuffed with “mock meat” (TVP – textured vegetable protein) and quinoa, mixed with herbs & tomato and baked with a crispy Panko topping. Served with a side of Sicilian spaghetti pasta – spaghetti tossed with toasted pistachios, tomatoes, garlic, parsley, capers & topped with Parmigiano-Reggiano cheese.
